The owner is none other than a former professional chef who left his steady job to pursue his dream of running his own business.

From hotel chef to secret recipe owner, Pae-Nattapol Puangpikul, the shop owner, said his journey began from feeling worn out as an employee. After consulting with his girlfriend, he decided to build on his chef skills by focusing on "crispy pork." Starting from scratch, he experimented repeatedly, adjusted recipes using Google, and had close friends taste-test until confident he had perfected the formula.

The special aspect ofthe crispy porkhere lies in meticulous attention at every step, beginning with selecting pork belly with an 80 percent red meat and 20 percent fat ratio to avoid greasiness.

The preparation method is more complex than usual: first baking the pork, then frying it the first time for 30 minutes, letting it cool completely for an hour, and then frying it again for 15 minutes. This double-frying technique yields pork that is tender and juicy inside, with golden, fluffy crispy skin that stays crisp for up to 12 hours.

Beyond the crispy pork, another highlight is the homemade sauces that Pae personally simmers, including green curry sauce, panang curry sauce, tamarind sauce, and curry powder stir-fry sauce, all rich with authentic curry flavors.

Recommended must-try dishes include crispy pork stir-fried with chili salt, tom yum fried rice with crispy pork, and crispy pork with holy basil, with prices starting at just 50 baht. For those wanting crispy pork alone as a snack, it’s available starting at 70 baht per 100 grams.
