The owner, 45-year-old Montha Samannui, runs the kitchen herself. She shared that the secret to the great taste came from her own dissatisfaction. “I used to love eating noodles and tried many places, but I felt the flavors never quite satisfied me.”
That dissatisfaction was the starting point for her to create her own recipes. She experimented extensively with stewing beef and beef offal, refining the side dishes and spices, and importantly, developing her own special dipping sauce to add a new dimension of spiciness to the noodles, until she perfected the flavor.
Originally, she had a shop in Yala Province, but when her husband moved back to their hometown in Tatom District, Phatthalung, she relocated with her family and brought her perfected flavors for locals to enjoy.
What sets this noodle shop apart is the careful stewing of various beef cuts and offal, which takes time and attention to achieve tender, mouth-melting meat. Combined with the special dipping sauce and a harmonious broth, the noodles are so delicious you almost don’t need to add any seasoning.
