When it comes to Kai Korale, a Malay Southern dish, many think of the sweet-forward taste popular in the three southern border provinces. But in Satun Province, there isa standout shopthat has adapted the traditional recipe to suit local palates, selling very well and passed down through three generations.
Mrs. Suwana Sare, owner of the famous Kai Korale shop located opposite the Chalung Civil Defense Volunteer Center in Satun town, explained that the secret recipe has been handed down for a long time, with the key being the adjustment to "not focus on sweetness" in line with Satun tastes. Here, the Kai Korale is marinated in spices, then steamed or boiled until dry before being topped with a rich, spicy coconut curry sauce that is bright red, aromatic, and offers a balanced, pleasantly sweet and creamy flavor.
Prices range from just 20 to 35 baht per piece. The shop also sells fried chicken starting at 20 baht, fried chicken necks at 10 baht, chicken skin, and chicken biryani wrapped in parcels for 30 baht each.
Though a small roadside shop, its taste is legendary. Anyone wanting to try it can come by from 6:00 a.m. to noon. The shop is closed every Tuesday and Friday, but orders and chicken biryani can be reserved by calling 098-726-6883.
