Who would have thought that "shrimp paste" and "boat noodles" would become a perfect flavor pair? This is the special recipe of Jae Roon Zaap Wer, whose dishes live up to the spicy name and are sold at a very friendly price of only 20 baht per bowl. The shop buzzes with energy, with both locals and visitors continuously coming to enjoy this unique taste that can't be found anywhere else in Uttaradit Province.
Mrs. Jaroon Onbua, known as Jae Roon, the experienced owner who has been in the noodle business for over 20 years, shared the origin of this unusual dish. She initially sold clear broth and Nam Tok boat noodles following her mother's traditional recipe. After sending her child to graduate, a customer jokingly suggested trying shrimp paste in the noodles. That remark sparked a period of trial and error, until she discovered that adding high-quality shrimp paste enhanced the broth with a rich and deep aroma. The key to perfection was adding bell peppers charred over a charcoal fire, then sliced into the bowl. This created a harmonious and balanced flavor even before seasoning. Neighbors who tasted it urged her to make it a regular menu item immediately.
Beyond the signature dish, the foundation of this shop’s flavor lies in meticulous preparation. Jae Roon’s pork bone broth is renowned for its clarity and lack of any off-putting smell, achieved by thoroughly rinsing the pork neck bones with vinegar multiple times before simmering them with daikon radish and whole peppercorns for over 20 minutes, producing a naturally sweet and fragrant broth. Beef lovers are also well served, with carefully selected tender beef available. Whether pork noodles, beef noodles, or beef stew, paired with the charred bell peppers and crispy pork cracklings, the taste distinctly stands out from typical boat noodles.
Today, Jae Roon Zaap Wer has become a popular must-visit spot for anyone passing through Laplae District. Many are captivated by the perfectly balanced savory flavors and appreciate the affordable price of just 20 baht per bowl. Jae Roon assures customers that she will maintain both the quality and price to allow locals to enjoy delicious food without spending much.
