
A strong foundation is essential. One of the first secret codes of S (Secure Domestic) at Bangkok Design Week 2026 is building strength within the domestic economy.
Third-year students from the School of Hospitality, majoring in Culinary Technology and Services at Suan Dusit University, took on the role of food culture ambassadors. They explored outstanding ingredients from the north to the south of Thailand, applying design thinking to elevate local products into creative, accessible urban menus. Here are five shops proving that "rural treasures" have immense potential when combined with the right ideas.
1. NAN MALEW
Signature dishes: Nan coffee, Ban Phaeo coconut & homemade roti.
This project uniquely connects flavors from two regions under the SOS concept (Sustain / Opportunity / Space). The students combined the rich, distinctive aroma of northern "Nan coffee" with the sweet, smooth fragrance of Ban Phaeo coconut from Samut Sakhon Province. The result is a signature drink with complex flavors, served alongside homemade roti that’s crisp outside and soft inside. This supports farmers in both areas by increasing their income and recognition.
2. AEW CHILL BK
Signature dishes: O-Aew (traditional/grain/fruit styles), Tiao So & Ko Sui.
Bringing the atmosphere of old Phuket town to central Bangkok, this shop highlights "O-Aew," a traditional Phuket dessert made from Chinese herb seeds, rarely found elsewhere. The students developed three approachable styles for urban customers: traditional with fragrant pandan syrup, a healthy grain version, and a fruity caramel coconut favored by youth. Served with local treats like Tiao So and Ko Sui, it offers a complete sensory experience as if dining in Phuket.
3. Bar Miang
Signature dish: Tea Leaf Salad.
The flavors of Chiang Rai’s mountains and mist are expressed in the "Tea Leaf Salad," influenced by neighboring cultures. This dish features varied textures—the crunch of mixed nuts, the richness of sesame, and a bold sweet, sour, and spicy taste. The fermented tea leaf aroma enhances the palate, making it a captivating vegetarian dish that reflects the highland lifestyle vividly.
4. Muan Muan - Vegetable Wrapped Rice
Signature dish: Fresh steamed rice wrapped in vegetables.
A specialty from Laplae district, Uttaradit Province, unfamiliar to many Bangkok residents. "Vegetable Wrapped Rice" is a culinary art using freshly ground rice flour, steamed thinly on a pan, then wrapped around various fresh vegetables and served with a flavorful dipping sauce. This dish is not only delicious and healthy with low calories but also showcases the meticulous cooking traditions of the Laplae people passed down through generations.
5. Look Isan
Signature dishes: Grilled pork/beef with fermented fish & grilled rice cakes with white soybean sauce.
Representing the spirit of the plateau, this shop proudly presents Isan cuisine through "pla ra" (fermented fish), marinated with pork and beef until fully infused, then grilled over low charcoal heat to emit an enticing aroma. Served with "khao jee" (grilled rice cakes) brushed with a secret white soybean sauce recipe, offering a savory, rich taste that balances the spicy dipping sauce. This elevates Isan street food to a refined level while keeping the authentic bold flavors.
