Dok Son snack is one of the traditional Thai desserts that is now difficult to find. Its unique golden yellow color comes naturally from the dok son flower, combined with the chewy softness of the flour and the richness of grated coconut, making this dessert a warm and cherished memory for many.

Today, Thairath presents the Dok Son recipe from Kham On Thai Dessert Shop in Phra Nakhon Si Ayutthaya Province, which was selected as one of the dishes in the project“The Lost Taste”by the Department of Cultural Promotion, to show everyone the meticulous process of making it.

1. Preparing the dok son flowers:

Wash the dok son flowers thoroughly, remove any hard leaves or stems, then let them drain until just damp to help the flour adhere well to the flowers.

2. Preparing the flour:

Mix appropriate proportions of rice flour and tapioca flour, then steam the flour until cooked.

3. Coating with flour:

Take the damp dok son flowers and gently coat them with the prepared flour, stirring carefully until the flowers are evenly covered in a soft white layer.

4. Steaming:

Place the flour-coated dok son flowers on a steaming rack lined with cheesecloth or banana leaves, then steam over boiling water for about 10-15 minutes until the flour is cooked.

5. Seasoning:

Mix the cooked snack with freshly grated mature coconut, then sprinkle with a mixture of sugar and salt to taste before serving.
