Historically, this dessert was given as a respectful gift to elders during Songkran. The recipe at Khun Pom's family has been carefully passed down for over 50 years to maintain the delicious standard across generations.

Uncle U explained that in the past, family labor was mainly relied upon for stirring Kalamae, but nowadays they have adapted by hiring external workers to meet the growing customer demand during the festival. They begin gathering to stir the sweets starting April 1 every year.

The key to the deliciousness of Kalamae Pak Lat lies in quality ingredients, including snake-tongue glutinous rice, fresh coconut milk, and genuine palm sugar. The glutinous rice is soaked overnight before being stirred in large pans until the grains break down. The stirring continues steadily for about 8 hours per pan to achieve a chewy, soft, glossy texture with a uniquely fragrant sweetness.
