The atmosphere at the Bang Kung Rice Field activity area in Bang Kung Subdistrict, Sri Maha Phot District, Prachinburi Province, became especially lively during the first What’s in Prachinburi event, attracting a large crowd of shoppers. The 30 carefully selected booths featured exclusively premium products, with the food zone drawing the most interest. Highlights included Yai Lap’s long-standing fish cake recipe and Italian sausages crafted by a Swiss chef, usually found only in five-star hotels.
However, the booth that surprised many and made visitors pause to read the sign was FRET MUSIC & DINING’s. Despite its modern-style name, the restaurant presented a rare local dish rarely found elsewhere."Sour Beef Skin Larb"Pornthep Duangcharat, the young owner, personally prepared each fresh dish to order. With a sharp, balanced, and intensely spicy flavor, it quickly became a popular menu item that many customers returned to buy again.
The dish’s uniqueness lies in the meticulous preparation at every stage, starting with selecting fresh beef skin, grilling it over fire, then boiling it properly. Afterward, it is thoroughly scraped clean and boiled again until tender following a secret recipe passed down from a friend’s mother.
Once the beef skin is tender and bouncy, Pornthep slices it into bite-sized pieces and mixes it with seasonings including chili powder, fish sauce, shallots, sliced onions, coriander, toasted rice, and a special seasoning sauce. A key ingredient is fermented fish sauce (nam pla ra), which enhances the flavor’s richness and appeal. The dish is finished with a sprinkle of fresh mint and served alongside fresh vegetable accompaniments.
