Anyone visiting San Chao Rong Thong Market in Wiset Chai Chan District, Ang Thong province, will notice a distinctive aroma near Wat Nang Nai Thammikaram, close to the Government Savings Bank. This is where the grilled Riwgiu fish stall is located, a famous local delicacy that has been delighting taste buds for over 45 years.
Although grilled Riwgiu fish appears simple, it is now rare to find. Its rich flavor and unique texture have made it a traditional snack that continues to charm both locals and tourists who visit regularly.
Pramot Chatamornwiset, 45, the current owner, revealed he is the third-generation heir carrying on the family business. Grilled Riwgiu fish is a local snack made from sweet fish meat, or red fish, mixed with flour and seasonings following an ancient recipe. The mixture is shaped into thin round sheets and dried to preserve it. Initially sold at just 1 baht for 3 pieces, the shop now packages and sells them in bags for 20 baht each, accompanied by a special family recipe dipping sauce.
The shop’s careful technique involves grilling over a charcoal stove, requiring skill to control the heat so it’s not too strong and to turn the fish sheets evenly until a fragrant aroma arises. Customers can choose their preferred texture: grilled lightly for a soft, golden color or grilled longer until crispy and dark golden. The fish is enjoyed with a special sauce made from palm sugar, vinegar, and chili, delivering a balanced blend of sweet, spicy, and sour flavors.
For those wishing to taste this legendary flavor, the grilled Riwgiu fish stall operates daily from 10:30 a.m. to 7:00 p.m., closing only on rainy days.
