The morning atmosphere at the Uthai Thani Municipal Market by the Sakae Krang River, a hub of local life and culinary heritage for over a century, remains vibrant with traditional breakfast stalls passing down their wisdom through generations. One of the most popular shops is Uthai Thani Kanom Krok run by 36-year-old Kritchayapha Homnoree, the third-generation heir who inherited the original kanom krok recipe from her grandmother and mother, who have sold here for more than 70 years.

What is notable is that the shop today offers not only the original flavors but also has innovated and elevated the kanom krok toppings to four diverse and unique varieties, making it a key breakfast destination that both tourists and locals must visit.

The uniqueness of Uthai Thani kanom krok begins with the preparation of the batter, a secret recipe requiring soaking glutinous and regular rice overnight, then draining and blending it with cooked rice to achieve a fragrant, soft, and sticky texture. Its hallmark is that when poured onto the pan, the top must be tight and beautiful without cracking. This is combined with the use of coconut cream extracted fresh daily from the Thap Sakae coconuts of Prachuap Khiri Khan Province, giving a particularly rich and smooth flavor.

Regarding pricing, the traditional coconut cream with green onion topping and corn topping are sold at 7 pairs for 25 baht. Meanwhile, the shop has created a new topping featuring minced shrimp with bamboo shoots, using sweet and crunchy bamboo shoots from Khao Sakae Krang finely chopped and stir-fried with minced shrimp, dried shrimp, and the three-spice blend of pepper, coriander root, and garlic, becoming a famous fusion menu item that visitors to Uthai Thani must try.

Recently, the shop introduced another new flavor: minced chicken stir-fried with the three-spice blend. Although it has been on sale for only a few days, it has received overwhelming positive response, with customers lining up continuously. Both the minced shrimp bamboo shoot and minced chicken three-spice toppings are sold at 7 pairs for 35 baht.

Additionally, the shop preserves an old tradition of using aluminum spoons originally used for eating on trains in the past, which are no longer available today but remain essential tools that help scoop out the kanom krok in beautiful shapes without sticking to the pan.
