From Italian Chef’s Recipe to Teochew-Style Baked Prawns and Crab with Glass Noodles at 70 Baht per Box in Front of Phadungrat School, Phitsanulok

Come and try "Naphatsorn Baked Glass Noodles with Prawns" located in front of Phadungrat School, Mueang District, Phitsanulok. The recipe comes from the owner’s Italian husband, who was formerly a hotel chef. Prices start at 70 baht per box.

At the food court in front of Phadungrat School along Phayaso Road, Mueang District, Phitsanulok, there is a stall selling crab and prawn baked glass noodles with flavors comparable to a Teochew-style Chinese restaurant, but offered at affordable prices.

This stall belongs to 49-year-old Naphatsorn Kongrangsarn from Samo Khae Subdistrict, Mueang District, Phitsanulok. She personally prepares each pot of the flavorful dishes herself.

Naphatsorn revealed that the recipe was passed down from her husband, an Italian who was once a chef at a prestigious hotel. He adapted the original Teochew Chinese restaurant baked prawn glass noodle recipe, modifying and intensifying the flavors to better suit Thai tastes.

The key to the deliciousness lies in the special broth simmered with various Chinese spices, combined harmoniously with the fragrant aroma of Thai coriander root. When high-quality glass noodles are boiled and thoroughly mixed with this broth, they become tender and fragrant with every bite. Paired with the stall’s spicy seafood dipping sauce, the flavors become even more balanced and complete.
