In the evening atmosphere at Save One Night Market, Mueang District, Nakhon Ratchasima Province, one of the shops creating a sensation and widely discussed online is "Paravee Suki Roll." It stands out with its giant suki rolls generously filled, freshly wrapped and steamed, emitting an aroma that attracts both locals and food enthusiasts from other provinces, reaching daily sales of up to 500 pieces.
Panisara Khaimuk, or Pla, 57, the shop owner, revealed the success story. The suki roll began from studying cooking tutorial videos by "Earth Sodchuen" on Facebook, then adapting and refining the recipe until perfect.
Initially, she tried selling smaller rolls at 10 baht each but faced issues with size and wrapping complexity. She then shifted strategy to large suki rolls sold at 50 baht per set, which includes two large rolls topped with shredded chicken for extra protein, served with a special dipping sauce balanced in sour, sweet, salty, and spicy flavors.
The key to Paravee Suki Roll’s popularity lies in ingredient selection and health-conscious production methods. The shop uses over 16 kilograms of high-quality pork thigh daily, finely ground and mixed with glass noodles and carrots, seasoned with oyster sauce, salt, sugar, and green-capped seasoning sauce. They use mixing techniques to tenderize the meat instead of additives, resulting in especially tender ground pork.
Regarding the Chinese cabbage preparation, the shop carefully washes it with vinegar, blanches it in hot water, then rinses it three times with clean water before neatly wrapping the rolls diagonally. They steam the rolls using a custom-made steamer that can handle up to 100 pieces per batch.
The owner concluded with her business philosophy: the most important thing is determination and prioritizing quality and deliciousness. If customers enjoy good food, profit will naturally follow.
