The key to the shop’s standout quality is preserving the original identity by usinga charcoal stoveto simmer pork bone broth all day long, keeping the broth piping hot with a subtle smoky aroma, as Pa Chalorm often says, “Noodles should be eaten while blowing on them.”

There are two legendary signature dishes that visitors must order: “Traditional Pork Tom Yum Noodles” The secret lies in meticulous, fresh preparation bowl by bowl, loaded with tender minced pork, small dried shrimp, green onions, coriander, fried garlic, poured over with piping hot broth. The mixture is stirred well before being served in a bowl lined with blanched kale and bean sprouts, topped with a soft-boiled egg with a runny yolk and homemade crispy fried pork cracklings.

Beef lovers are not left out with “Traditional Braised Beef Noodles” which are slow-cooked over low heat for four hours with more than 20 types of Chinese herbs until the beef is tender and melts in the mouth. The clear broth is fragrant with the aroma of Chinese herbs and rich beef flavor, served with beef balls, tendon, and ribeye beef.

Beyond these two signature dishes, the shop offers many other options including Yen Ta Fo Tom Yum noodles, braised chicken drumstick noodles, spicy pork or chicken noodles, and fresh beef with black pepper.
