They think it’s difficult, must be careful of sharp spines, and risk damaging the flesh if done incorrectly. However, peeling durian at home isn’t hard if you know the techniques and have the right tools.
Once you have the tools ready, follow these correct and safe peeling steps:
Before cutting, look at the base or middle of the durian; you will see faint lines dividing the durian flesh into segments (ridges). Finding these seams is the key to easy peeling.
Hold the durian firmly with a thick cloth, then use the knife to slice off a small part of the bottom (about 1-2 centimeters). This exposes the star-shaped seam pattern clearly and allows the durian to stand securely on the cutting board.
When the star-shaped seams at the base are visible, gently cut with the pointed knife from the bottom along the seams up to the stem.
Caution : Do not press the knife too deeply to avoid cutting into the flesh and causing damage. Cut along all the seams around the fruit.
After cutting all seams, use both hands (wearing gloves or holding a cloth) to grip the splits at the durian’s base and pull the shell apart. The shell will open easily along the cuts, allowing you to remove the golden-yellow flesh neatly onto a plate.
